How to Make the Most of a Two-Night Stay in the Catskills

June 20, 2025

Planning a short stay in the Catskills? Two nights at The Emerson Resort is the perfect amount of time to reset, recharge, and see why the Catskills are worth the hype. Here’s a no-fluff guide to making every hour count.

Plan in Advance

Start by checking out our Stay & Play Packages, which offer exclusive savings and unforgettable experiences! From wine tours to fitness getaways, these curated experiences are popular for a reason, so be sure to book in advance.

Add-on options like in-room amenities, “pupgrades” for your furry friends, fishing gear, and other custom touches make it easy to personalize your getaway. And if a spa day is part of your plan (it should be), be sure to book your treatments early—appointments can book out, especially on weekends.

Day 1: Arrive and Unwind

Check in, drop bags, take a deep breath. You’re here. Whether you’re staying in the rustic-cozy Lodge or the elegant, creek-facing Inn, each space offers its own charm. Whichever you choose, nature is always just outside your window, and relaxation is built into every detail.

Get your bearings.
Take a short walk around the property (here’s a map) and you’ll come across plenty of places to unwind:

  • Stroll through our nature trails – Check out the guide to our walking paths and enjoy a peaceful start to your vacation
  • Sit by the Esopus Creek – Just steps away, the creek offers a peaceful soundtrack and gorgeous views.
  • The Shops at Emerson – Located in a restored 19th-century dairy barn, the Shops are filled with curated home goods, gifts, clothing, and more. There are options for the whole family!
  • Relax in our great room – enjoy the fireplace, catch up on some reading, or take in the view

Dinner at Catamount.
Our on-site restaurant keeps it casual but delicious. Seasonal ingredients, solid cocktails, and if the weather’s good—grab a patio table and enjoy the mountain air.

Day 2: Get Exploring

Fuel up with breakfast at Catamount. Local ingredients, great coffee, and the views don’t hurt either! Catamount also offers an excellent weekend brunch.

There are plenty of ways to spend your day:

  • Spa Day: Our spa offers custom treatments that harmoniously blend nature, serenity, and restoration. If you’re an overnight guest, spend time in the steam room, relaxation room, sauna, and outdoor hot tub. No booking needed!
  • Guided Nature Walk: Join an on-property walk with a naturalist. Easy, informative, and a great way to immerse in the scenery. Sign up here or speak to the front desk for more info.
  • The World’s Largest Kaleidoscope: Towering at 60 feet tall, this historic silo has been transformed into a visual and sound spectacle like no other! Each Kaleidoshow is a unique blend of art, technology, and imagination.

See Some Catskill Area Attractions

Our Area Attractions page is your go-to resource for things to do during your stay—from peaceful walks and scenic hikes to breweries, museums, and charming towns full of character.

Here are a few of our favorites:

  • Rail Explorers (Phoenicia) – Pedal along the Esopus Creek on a scenic railbike tour that’s fun, unique, and great for all ages.
  • Minnewaska State Park – iconic and dramatic natural features. Perfect for hiking, exploring, rock climbing, and more.
  • Phoenicia Playhouse – Catch a live performance or community event at this cozy, local theater right in the heart of town.
  • Woodstock Brewing – Sip craft beer and enjoy laid-back bites in an artsy, welcoming setting.
  • Hudson River Maritime Museum (Kingston) – Learn about the region’s rich boating and river history along Kingston’s waterfront.

Evening: Chill How You Want

Stick around for another laid-back dinner at Catamount—casual, local, and always good—or head out to explore the scenes in nearby towns like Phoenicia, Woodstock, or Tannersville. Each has its own charm, with cozy shops, art galleries, and restaurants that serve every craving.

Back at the resort, unwind with one of our weekend campfire nights on Fridays and Saturdays. It’s the perfect way to end the evening with some cozy stargazing.

Day 3: Savor for A Little Bit Longer

Grab a coffee and savor it by the creek. Enjoy one last stroll through the Shops—maybe pick up a locally made gift for someone special, or a treat for the road. At The Emerson, your stay—every detail, every moment—is our priority. We hope you’ve enjoyed your time here, found space to recharge, and that you’ll be back again soon.
